Cheesy Salsa Dog

Cheesy Salsa Dog

Black Bean Salsa:
1/2 cup frozen or canned corn;
1 cup tomatoes, diced;
1/2 cup black beans, drained and rinsed;
1 jalapeno, chopped (remove seeds and ribs to cut the heat);
1 teaspoon cumin seeds;
1/2 teaspoon chili powder;
1 lime, zested and juiced;
2 tablespoons chopped cilantro;

4 all white turkey hot dogs or soy hot dogs;
4 whole wheat hot dog buns;
1/4 cup shredded reduced-fat sharp Cheddar cheese.


Prepare the salsa. 
Combine all ingredients into a small bowl.
Place the hot dogs on a sheet pan and roast for 15 minutes. 
Heat a nonstick skillet over medium-high. Spray the inside of each bun with nonstick cooking spray. Place the buns in the pan and heat until golden brown. 
To assemble, top each hot dog with 1/4 cup of salsa and 1 tablespoon of cheese.
Serving Size: Makes 4 servings. One hot dog and bun per serving with 1/4 cup salsa and one tablespoon of cheese
